Hong Kong’s iconic typhoon shelters were once bustling communities of fishing families with its own unique subculture, including “floating kitchens” that served culinary delights fresh from the sea to hungry land dwellers. They were most famous for their typhoon shelter crab, which consists of flash fried crab infused with scallions, chilies, garlic, and fermented bean sauce. This dish has been a cherished favourite for many Hong Kongers and garnered the attention of tastebuds around the world.
Drawing inspiration from the traditional flavours of old Hong Kong and its roots as a fishing village, Holy Duck Chili Typhoon Shelter Sum Sum seasoning is our gastronomical representation of this special dish. The words 嬸嬸 [sum2 sum2], which is a homophone in Cantonese meaning “sprinkle sprinkle” or “auntie”, pays homage to the tough and mighty old ladies that work tirelessly at sea. A meticulous blend of over 20 natural ingredients is infused with duck fat over a fry wok to allow the flavours and aromas to fully mature and permeate into perfectly golden garlic and shallot crisps.

Holy Duck Chili is a product of familial wisdom and love. Founders Chris and Louise relocated from Hong Kong to Vancouver in February 2020. Struggling to find locally and sustainably made Asian condiments and sauces, their search led them to neighbourhood general stores. Inspired by the abundance of small-batch crafted sauces using international recipes, they still saw much room for premium-quality Asian sauces made with local ingredients, with sustainability in mind. They debuted their first chili oil product in the summer of 2021. Their flagship product is based on Louise's grandmother's recipe with the unique addition of duck fat.
